Im not entirely sure how this would be possible but...
to make the emulator so that when you press a directional button, i.e. the arrow keys, it makes the directional intensity(as in a joystick) come on gradually rather than all at once |

Closest thing to that would be the [Real] N64 Range modifier in Jabo's / N-Rage's DirectInput.
Automatic increment of sensitivity I am not sure is implemented at all.

Or just use a gamepad, my Xbox 360 controller does that by your own pressure

Forgot about that, auto-range support more-or-less is with actual analog devices.
